At what temperature should you serve wine? The complete guide

It is the detail most often forgotten, and yet it changes everything. Served too cold, a wine closes up and hides its aromas; served too warm, alcohol takes over and masks the finesse. Serving temperature is the simplest, and most effective, setting to reveal a bottle. Here is how to stop getting it wrong.

Why temperature changes everything

Temperature acts directly on the volatility of aromas and on the perception of flavours. When cold, the aromatic molecules stay “asleep” and acidity stands out; when warm, aromas express themselves but alcohol and tannins become intrusive. Finding the right balance lets the wine tell its story, the same one you explore with your palate and nose.

The benchmark by type of wine

Keep this scale in mind: the lighter and crisper a wine, the cooler it is served; the richer and more tannic, the more tempered.

Tip: in the fridge, a wine loses about 1°C every 8 to 10 minutes.

Practical tips

  • Take whites out of the fridge 10 minutes early: at 4°C (fridge temperature) they are too cold and mute.
  • Chill a light red 15 minutes in summer: it gains freshness and appeal.
  • The ice bucket (water + ice + salt) cools a bottle in 10 minutes, twice as fast as ice alone.
  • ✔ When in doubt, better to serve slightly too cool: the wine warms up quickly in the glass and in the hand.

The big trap: the “room-temperature” red

“Room temperature” once meant bringing wine to the temperature of a room in the 19th century, about 16–18°C. Nothing to do with our interiors heated to 20–22°C today. A red served at today’s room temperature seems heavy and alcoholic. The right move: chill it slightly before serving.
