Caudalie: measuring how long a wine lasts on the palate

Some wines barely brush past us, others linger, leaving a trace, a memory, an aromatic music that persists long after the sip. This phenomenon is called the caudalie, and it turns tasting into an extended experience.

In the language of wine, we do not only speak of taste, colour or aromas: we also speak of time, persistence and afterglow. The caudalie is that invisible unit of measure telling how many seconds the wine still “sings” on the palate after you have swallowed or spat it. A notion both sensory and poetic, but also highly revealing of a wine’s quality.

What is a caudalie?

The word “caudalie” comes from the Latin cauda (“tail”, “extension”) and refers, in oenology, to how long the wine’s aromas persist on the palate after tasting. This sensation is also called “length on the palate”.

The word inspired the name of the famous French cosmetics brand Caudalie, which uses grape polyphenols in its products. A way of extending the idea of persistence, this time on the skin.

How is a caudalie measured?

One caudalie equals one second of aromatic persistence after swallowing (or spitting) the wine. You count in your head:

“One… two… three…” until the aromas fade away.

  • Under 3 caudalies: a short wine, often simple or young.
  • 4 to 7 caudalies: fine persistence, satisfying balance.
  • 8 caudalies and more: great length, a sign of higher quality and a complex wine.

Note: it is not the taste of alcohol that counts, but the persistence of the aromas (fruit, spice, wood, flowers, and so on).

Why does the caudalie matter?

Length on the palate is often considered one of the best criteria for judging a wine, alongside balance and complexity. The longer a wine persists, the more it is crafted, rich and expressive. It is a sign that the aromatic molecules bind harmoniously to the wine’s structure (acidity, tannins, alcohol, sugars).

Some terroirs (gravel, limestone, clay-limestone) offer a minerality or aromatic power that prolongs the sensations. The grower’s work, grape ripeness and barrel ageing all influence this length.

Describing a caudalie also means putting words to a subtle sensation: a form of sensory education, open to everyone, to feel and share your tasting emotions better.

A few concrete examples

  • A young Loire Sauvignon Blanc: 3–4 caudalies.
  • An aged Burgundy Pinot Noir: 6–8 caudalies.
  • A Bordeaux Grand Cru Classé: 8–12 caudalies, or more.
  • An old Vintage Port or a Château d’Yquem: sometimes 15+ caudalies, with aromas evolving over several minutes.

How to train your own perception of the caudalie

Here is a simple idea.

1. Listen to the silence after the sip

Focus on what remains on the palate: is it fruity? woody? spicy? Does the sensation fall away suddenly or slowly? Do you feel successive layers?

2. Count naturally

No need for a stopwatch. Simply count: one… two… three… noting the moment the aromas truly fade.

3. Compare

Try tasting two very different wines in a row and observe their respective caudalie. The exercise sharpens your feel for the diversity of persistences.

4. Note and put into words

Keep a tasting notebook. Record not only the number of caudalies, but also the nature of the persistence: fruity, mineral, woody, minty. The more you express, the more you remember.

The caudalie is the memory of the wine in your mouth. A little like the last note of a piece of music, it extends the emotion, leaves a lasting imprint, and carries us well after the liquid has gone.

Learning to feel and name the caudalie means refining your palate and giving depth to tasting. It is also, in a way, respecting the grower’s work and savouring the fruit of their patience.
